Cole’s Bakery and Cafe is the perfect place for all your dietary needs. Not only does the bakery have an inviting atmosphere, Cole’s has a large variety of dairy-free, vegan and keto options and everything is made completely gluten and peanut-free.
Cole’s menu has something for everyone, from vegan mac and cheese to fried buffalo cauliflower. The cauliflowers are so crunchy and juicy; you could almost mistake them for a chicken wing. They are coated in egg before they’re fried, so take caution if you have dietary restrictions. Nevertheless, these are a must try. The fried cauliflower also comes in teriyaki and BBQ flavors.
For a meat and cheese lover, look no further than the nacho selection. Cole’s BBQ pork nachos consist of meat, crunchy chips and a complete coating of cheese. The BBQ pork is sweet without being overpowering, topped with a moderate amount of onions.
Cole’s doesn’t skimp on its bakery, offering a whole case of keto options. The bakery uses a sugar substitute extracted from a monk fruit which contains no calories and no carbs. Cole’s has a large variety of cupcakes, cookies, scones and many keto options. If you want to order a meal and sit, they also provide a keto section on their menu which contains French toast, sandwiches, pizza and more.
Cole’s lemon bars are too good to pass up, dietary restriction or not — they boast a perfect texture with a fresh lemon taste.
“I don’t usually eat dairy-free things, but I didn’t even notice a difference for any of the desserts I tried,” said Christina Blackbourn, a senior at Gonzaga. “The brownies with sprinkles were my favorite thing since they were basically pure chocolate.”
If you plan on visiting Cole’s, keep in mind that they have a huge selection and many things to take home such as honey, burgers, ice cream, and keto-friendly bread. The service is also quick and friendly, making the bakery and cafe the perfect place to sit down and have a meal. Cole’s Bakery and Cafe is located at 521 E. Holland Ave. and is open Monday through Wednesday from 9 a.m. to 6 p.m. and Thursday through Sunday from 8 a.m. to 7 p.m.
